It was about 11 last night, I was in bed, and my always hungry athlete stopped by my room, “Do we have any brownies or cookies?”

We both knew we didn’t, but I know that I have limited opportunities with my kids who won’t be home for many more years.

Life isn’t always fair, other people aren’t always nice, and school isn’t always fun. I chose to get up and make the brownies, even though it was nearly midnight. You will never regret being kind.

They were warm, and gooey, and delicious!

Brownies

Mix by hand:

  • 1 1/2 c. Flour
  • 3/4 c. Cocoa powder
  • 1/2 tsp. Baking Powder
  • 1 tsp. Kosher salt
  • 3/4 c. Melted Butter
  • 2 Tbsp. Water
  • 2 tsp. Vanilla
  • 2 eggs

Blend well. Preheat oven to 350°. Butter a 9×13 baking dish, then spread batter in the pan. If desired, press walnuts into half (or all) of the batter.

Bake for 18-25 minutes, or until toothpick comes out semi moist. Allow to cool in the pan for 10 minutes before cutting with a plastic knife.

Enjoy!!
