It’s Halloween, and we need a warm, cozy soup for the chilly evening ahead. I love this easy taco soup that can be thrown together and left alone to simmer.

Taco Soup

  • 1 lb. Ground meat (I used bison)
  • 1 yellow onion, chopped
  • 1 can corn, undrained
  • 2 cans beans, undrained (I used black and Pinto)
  • 1 can green chilies, undrained
  • 1 can Rotel tomatoes, undrained
  • 1 package taco seasoning
  • 1 package ranch dressing
  • 8 oz. Homemade tomato paste
  • 1 1/2 c. Beef stock

In large stock pot, add 1 Tbsp. Olive oil and cook meat and onion until meat is browned and onion is tender.

Drain any fat, then add all of the remaining ingredients to the pot, stir, and reduce heat to low. Pot a lid on and let simmer until ready to eat. Lake soupop with cheese, sour cream, cilantro, corn chips,
