It’s a crisp fall Sunday evening, and the kids are craving dessert. It’s 6 p.m., it’s dark, we’ve had dinner, and frankly I’m ready for bed. If I went to bed now I’d be up all night, so I decided to make cookies for my teenagers.

These are quick and delicious, plus I had the ingredients.

*Preheat oven to 375° F

Snickerdoodles

  • 1/2 c. Butter
  • 1 c. Sugar
  • 1 egg

Cream together, then add:

  • 1/4 tsp. Kosher salt
  • 1/4 tsp. baking soda
  • 1/2 tsp. Cream of Tartar
  • 1 1/2 c. Flour

Mix well. If it’s crumbly (mine was), add 1-2 tsp. water and mix.

Next blend together on a separate plate:

  • 2 Tbsp. Sugar
  • 1 tsp. Cinnamon

Roll into ping pong sized balls, then roll in cinnamon-sugar mix and place on cookie sheet.

Bake at 375° for 10-11 minutes. Remove from oven and allow to rest on the cookie sheets for 10 minutes, then transfer to cooling rack. Makes about 2 dozen cookies.
